Leeks and onions like all of the allium’s are packed with unique compounds that enable our gut bacteria to flourish. These are covered in great detail in ‘Healthy Eating Made Simple’ and put in a major appearance. That makes this dish quite the powerhouse for supporting gut health.
1 large white onion - finely chopped
3 cloves of garlic - roughly chopped
250g of leeks - sliced
250g of potatoes - diced
300 of vegetable stock
80ml coconut cream
Pinch of nutmeg (optional)
1) Saute the onion and garlic in a little olive oil along with. good pinch of sea salt for about 5 minutes. Add the sliced leeks and continue to saute until the leeks have softened.
2) Add the diced potatoes, veg stock and coconut cream and simmer until the potatoes have softened. Add the nutmeg if using, and then blend into a smooth velvety soup.
