Warm Red Cabbage, Pomegranate & Walnut Salad with Mustard Dressing

Ingredients (Serves 2–3)

½ red cabbage, shredded
1 tbsp olive oil
Seeds from ½ pomegranate
50g walnuts
1 tsp wholegrain mustard
1 tbsp apple cider vinegar
1 tsp honey
Black pepper

 

Method

Heat olive oil in a pan and gently soften cabbage for 5–7 minutes until just tender but still vibrant.

Whisk mustard, vinegar and honey together.

Toss cabbage with dressing, walnuts and pomegranate seeds.

Serve warm.
