Ingredients (Serves 2–3)

150g cooked green lentils
2 cooked beetroot, diced
80g soft goat’s cheese
2 tbsp pumpkin seeds
1 tbsp olive oil
1 tsp Dijon mustard
1 tbsp apple cider vinegar
Handful rocket
Black pepper

 

Method

Warm lentils gently in a pan.

Whisk olive oil, mustard and vinegar.

Toss lentils with beetroot and rocket.

Top with crumbled goat’s cheese and toasted pumpkin seeds.

Serve slightly warm.
