Turkey, Spinach & Herb Meatballs with Courgette Ribbons

Ingredients (Serves 4)

500g turkey mince
1 egg
2 tbsp chopped parsley
1 garlic clove, crushed
50g finely chopped spinach
1 tbsp olive oil
3 courgettes, ribboned with a peeler
Juice of ½ lemon
Sea salt and black pepper

 

Method

Preheat the oven to 190°C.

In a bowl, combine turkey mince, egg, parsley, garlic and spinach. Season well and mix thoroughly.

Shape into small meatballs and place on a lined baking tray. Bake for 20–25 minutes until cooked through and lightly golden.

Meanwhile, heat olive oil in a large pan and gently sauté the courgette ribbons for 2–3 minutes until just tender but still vibrant.

Finish the courgettes with lemon juice and serve topped with the baked meatballs.
