Ingredients (Serves 4)
4 large red peppers
500g turkey mince
1 courgette, finely diced
1 onion, finely chopped
2 garlic cloves, crushed
1 tsp dried oregano
400g chopped tomatoes
1 tbsp olive oil
Sea salt and black pepper
Method
Preheat the oven to 190°C.
Slice the tops off the peppers and remove the seeds. Place them upright in a baking dish.
Heat olive oil in a pan and cook the onion for 5 minutes until softened. Add garlic and cook briefly.
Add the turkey mince and cook until browned. Stir in courgette, oregano and chopped tomatoes, and simmer for 10 minutes until slightly thickened.
Spoon the mixture into the hollowed peppers. Cover loosely with foil and bake for 25–30 minutes until the peppers are tender and the filling is cooked through.
