Slow-Cooked White Bean, Tomato & Rosemary Soup with Kale

Ingredients (Serves 4)

1 tbsp olive oil
1 onion, chopped
2 garlic cloves, crushed
2 tins white beans, drained
400g chopped tomatoes
1 litre vegetable stock
1 sprig rosemary
100g kale, shredded
Black pepper

 

Method

Soften onion in olive oil.

Add garlic, beans, tomatoes, stock and rosemary. Simmer 20 minutes.

Stir in kale and cook until tender.

Season and serve.
