Sardine & Fennel Traybake with Capers and Cherry Tomatoes

Ingredients (Serves 2)

2 tins sardines
1 fennel bulb, sliced
150g cherry tomatoes
1 tbsp olive oil
1 tbsp capers
Juice of ½ lemon
Black pepper

 

Method

Preheat the oven to 190°C.

Arrange the fennel and cherry tomatoes on a baking tray and drizzle with olive oil. Roast for 15 minutes until softened.

Add the sardines and capers to the tray and return to the oven for a further 5–7 minutes until heated through.

Finish with lemon juice and black pepper before serving.
