Lentil, Roasted Beetroot & Rocket Salad with Pomegranate Molasses

Lentils provide galacto-oligosaccharides and resistant starch, both key substrates for SCFA production. Beetroot polyphenols support microbial diversity and vascular health, while pomegranate delivers punicalagins, associated with reduced gut inflammation and improved barrier integrity.
Ingredients (serves 2)
- 150g cooked green lentils
- 200g beetroot, roasted and diced
- 40g rocket
- 80g Feta cheese - crumbled
- 1 tbsp extra virgin olive oil
- 2 tsp pomegranate molasses
- 1 tsp red wine vinegar
- Sea salt and black pepper
Method
Mix the lentils, beetroot and rocket in a bowl.
Whisk the olive oil, pomegranate molasses and vinegar, then toss through the salad.
Season and serve.
