Lentil, Beetroot & Parsley Warm Salad with Tahini

Ingredients (Serves 4)

200g cooked green lentils
2 cooked beetroot, diced
2 tbsp chopped parsley
1 tbsp olive oil
2 tbsp tahini
Juice of ½ lemon
1 small garlic clove, crushed
Sea salt and black pepper

 

Method

Warm the lentils gently in a saucepan over low heat.

Add the diced beetroot and chopped parsley and stir to combine.

In a small bowl, whisk together tahini, lemon juice, garlic and a splash of warm water until smooth and pourable.

Spoon the lentil mixture onto a serving platter and drizzle over the tahini dressing just before serving.
