Lentil, Beetroot & Parsley Warm Salad with Tahini

Feb 23, 2026

Why This Supports Liver & Detox

  • Beetroot supports bile production and flow, which is central to the elimination of fat-soluble toxins and metabolised hormones.
  • Lentils provide fibre and plant protein, supporting stable blood glucose and aiding elimination of conjugated compounds through the stool.
  • Parsley contains flavonoids and vitamin C, contributing antioxidant support during detoxification processes.
  • Tahini provides healthy fats, supporting fat-soluble nutrient absorption and bile secretion.
  • This dish supports detoxification through bile flow, fibre-mediated elimination and oxidative protection.

Ingredients (Serves 4)

200g cooked green lentils
2 cooked beetroot, diced
2 tbsp chopped parsley
1 tbsp olive oil
2 tbsp tahini
Juice of ½ lemon
1 small garlic clove, crushed
Sea salt and black pepper

Method

Warm the lentils gently in a saucepan over low heat.

Add the diced beetroot and chopped parsley and stir to combine.

In a small bowl, whisk together tahini, lemon juice, garlic and a splash of warm water until smooth and pourable.

Spoon the lentil mixture onto a serving platter and drizzle over the tahini dressing just before serving.
