Green soups are a great way of packing in the green veg. It is fair to say that greens aren't always the most exciting of flavours or ingredients, but when whipped up like this, these nutritional powerhouses become rather moreish.
1 large white onion - finely chopped
3 cloves of garlic - roughly chopped
1 medium sized potato - diced
250g of frozen peas
Half a head of broccoli - broken into florets
2 large handfuls of baby spinach
250-300ml of vegetable stock
1) Saute the onion and garlic in a little olive oil, along with a pinch of sea salt until the onion softens.
2) Add the diced potato, peas, and broccoli. Pour over enough vegetable stock to cover all the veg. Simmer until the potato softens.
3) At this stage, add the baby spinach and cook until it wilts. Then, using either a countertop blender or a stick blender, blend into a smooth vibrant green soup.
