Ginger, Kale & White Bean Soup with Fresh Herbs

Ingredients (Serves 4)
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, crushed
1 tbsp grated ginger
2 tins white beans, drained
1 litre vegetable stock
100g kale, shredded
2 tbsp chopped fresh herbs (parsley or coriander)
Sea salt and black pepper
Method
Heat olive oil in a large saucepan over medium heat. Add the onion and cook until softened.
Stir in garlic and ginger and cook briefly until fragrant.
Add the white beans and vegetable stock. Bring to a simmer and cook for 15–20 minutes.
Add the kale and cook for a further 5 minutes until tender.
Stir in fresh herbs just before serving and season to taste.
