Fat Fabulous Avocado & Egg Breakfast Bowl

Starting the day with a big hit of protein and healthy fats is a sure fire way to keep your blood sugar levels stable and even and prevent mid morning dips and hunger pangs.
Serves 1
Ingredients:
- 1 avocado, halved and pitted
- 2 eggs
- 1 tbsp butter
- 1 tbsp chopped fresh parsley
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 180°C/350°F.
- Place the avocado halves in a baking dish.
- Crack an egg into each avocado half.
- Season the eggs with salt and pepper.
- Top each egg with a small piece of butter.
- Bake for 15-20 minutes or until the egg whites are set but the yolks are still runny.
- Remove from the oven and sprinkle with chopped parsley.
- Serve immediately.
This recipe is high in healthy fats, protein, and fibre, and contains only around 3g of net carbs per serving. Enjoy!
