Berry and Coconut Breakfast Parfait

This is a great prepare ahead dish that keeps well in the fridge for a couple of days.


Simple to assemble, nutrient dense, fresh and bright.



  • 2.5 tablespoons of mixed berries
  • 2 tablespoons of porridge oats
  • 2 teaspoons of mixed seeds
  • 3 tablespoons of coconut yoghurt
  • 1 teaspoon of maple syrup




  • In a single serve glass, place a tablespoon of porridge oats on the bottom.
  • Add a layer of 1.5 tablespoons of coconut yoghurt
  • Next add 1 tablespoon of berries
  • Add 1 tsp of mixed seeds.
  • Repeat this layering a second time.
  • Top with half a tablespoon of yoghurt and the maple syrup.
