This is an absolute winter wonder. It is that warming hug that you need on a freezing cold day, especially if you are feeling under the weather. With warming spices and comforting grains, this hits the spot.


  • Saute the onion, garlic, celery, carrot, star anise, cinnamon, and cloves, with a pinch of salt, in a little olive oil, until the onion has softened.
  • Add the chicken breast and the pear barley.
  • Cover with the stock and simmer until the barley has cooked and is soft. If you need to top up the liquid, then top up with additional stock. After this time, the flavours from the spices really leach out into the broth to give a divine warming soup.
  • Season with salt and pepper to taste.

1 red onion – finely chopped
1 clove of garlic – finely chopped
1 stalk of celery – very finely diced
1 medium carrot – very finely diced
2 star anise
2 cloves
2 cooked chicken breasts (ideally with skin) – cut into bite size chunks
200g of pearl barley
500 ml of chicken stock
Salt and pepper
