Raw Bibimbap |
This has to be one of my all time favourite dishes. In the normal way of preparing this dish, it is about 60% raw. With a bit of tweaking I have made it 100% raw!!!
This dish is usually prepapred using rice, and you can indeed use brown rice here instead of the cauliflower.
Ingredients
Half a small cauliflower
1 small courgette, grated
1 small carrot, grated
6 medium button mushrooms, finely chopped
1 tablespoon of toasted sesame oil
2 tablespoons of Korean Chilli paste
Method
- Cut the cauliflower half into a few small pieces and place into a blender. Blend until it becomes small rice sized pieces.
- Grate the courgette and carrot, and chop the mushroom.
- Mix all of these ingredients together.
- Stir through the sesame oil, and chilli paste
