Asparagus and Fennel dip |
I discovered this purely by accident. I threw together some ingredients that really needed eating, and this gorgeous dip was one of the creations. It contains two great kidney tonics - asparagus and fennel.
Recipe
12 asparagus tips (young are best) chopped in half
1 small fennel bulb roughly chopped
1 large garlic clove, finely chopped
1 tablespoon of extra virgin olive oil
Generous pinch of himilayan crystal salt
Method
1) Blanch or steam (preferable) the chopped asparagus and fennel until soft.
2) place them into a food processor, along with the garlic, olive oil, and the salt. Blitz well.......and thats it....easy peasy!

Fennel
This is a plant that has a plethoa of medicinal applications, as well as being a great source of minerals. Fennel will work as an antispasmodic and carminative. This means that it will ease intestinal cramps and dispel any wind and gas. It is also a great diuretic, which means it will stimulate urinary output. This will aid in detoxification, not to mention aid in maintaining a healthy blood pressure.
Asparagus
Asparagus is again a powerful diuretic. This is due to the presence of an amino acid called asparagine, which gives that strong smell to the urine when excreted (really unwelcome when at a busy urinal). There are also compounds, yet to be completely identified within asparagus that gives it an antirheumatic action.
