Gorgeous Guacamole

I love this, and so does Mrs Dale….so much so that I have to make two batches, or I never get a look in!!! Nutrient rich, intensely flavoured, and surprisingly filling.

  1 large ripe avocado

  1 large clove of garlic

  1 fresh red chili

  2 medium tomatoes

  Juice of half a lime

  2 tablespoons of flax seed oil

  Fresh coriander leaf (optional)

  Crystal salt to taste

  1. Half the avocado, discard the seed, and scoop the flesh into a food processor, along with the lime juice and oil. 
  2. Process until a smooth paste is formed.
  3. Finely chop the garlic, chili, and the tomatoes.
  4. Add the tomatoes, chili, and garlic, plus the coriander to the smooth puree, and salt to taste.
  5. Serve in a big bowl……and share if you really have to!

Medicinal Properties

Avocado

Avocado’s are an amazing food. If I hear one more person question me on this, and tell me they are fattening, I think I may possibly scream like a girl! They are a very dense source of vitally important fat – both omega 3 and omega 6 fatty acids (but not too much 6, which is important to note). These vital fats help to maintain the structure of every cell in your body, control inflammation, enhance nerve signalling…and even do the washing up for you. Ok, so maybe not that, but they are vital on many levels.

 Avocado’s are also a very rich source of vitamin E, which is an antioxidant that helps to protect cells from free radicals that are created from fatty substances.

Garlic

This wonder bulb has benefits that range from antiviral activity, through to cardiovascular health support. It contains a powerful chemical called ajoene which has been shown to reduce blood clotting, which can be protective against thrombus formation in individuals at risk of heart disease (please note though, individuals taking very high warfarin may well benefit from reducing their garlic intake). 

  Garlic also, quite obviously, is very high in some pretty strong smelling essential oils (ie the thing that makes your breath smell like Buffy the Vampire Slayer’s inside pocket). These are key to its antiviral activity, They can only be removed from the body via the breath, and as such, can kill any viruses and bugs that may be lurking in the respiratory tract, on their way out.

Chili

Chillies are wonderful. The capsaicin in them, the thing that gives their heat, is a powerful circulatory stimulant, is a pain killer, and is also decongestant. You didnt expect that now did you!
